Fig, Sesame and Olive Oil Energy Balls

Makes 15 energy balls

INGREDIENTS

10 dried figs
2 tbsp runny honey
1 tbsp tahini, runny and stirred
1 tbsp Oracle olive oil
1 ½ cups rolled oats
½ cup sesame seeds + more for coating
¼ tsp salt

INSTRUCTIONS

1. Remove the hard stem from your dried figs, then soak them in boiling water for at least 5 minutes to soften.

2. Transfer the soaked figs to a food processor or blender and pulse to form a paste. Then, add the honey, tahini and olive oil and blend until homogeneous. Add the oats, sesame seeds and salt and pulse a few more times until combined.

3. Roll the mixture into balls with your hands, then coat with sesame seeds and enjoy!

Energy balls can be stored at room temperature for 4-5 days and in the freezer for up to 3 months.
